Ajvar is a kind of sauce and consists of just a few ingredients: red pepper, aubergine, salt, oil and spices. You can eat it with meat, spread it on your bread and even stir it into your bulghur or tabouleh.

Making it yourself would be quite a time-consuming chore, so it's a good thing you can buy it ready-made. First, peppers and aubergines are roasted, then the peppers are peeled. The vegetables are finely chopped, after which it has to stew for a few hours with some oil and garlic. What you are left with is an orange-red sauce.

We first saw it in a recipe for ćevapčići (pronounced roughly as shevaptsjiiee): a Croatian dish mostly offered as street food that resembles Turkish kebab. It consists of minced meat with onion and parsley, from which a kind of sausages are formed.
You eat these with onion, pita-like bread and ajvar. And it is precisely the ajvar that completes this dish.

Also delicious with steak. Use it as a substitute for tomato puree or replace hummus with ajvar. 
Serve it with falafel (e.g. in a falafel bowl), stir it into your shakshuka or make a tasty bulgur salad with it.
