This shoulder or boston butt is used for the well-known pulled pork. This is a hugely popular meat dish.
The meat comes from the neck and shoulder of the pig :  the neck is completely boned, the shoulder still has the shoulder blade in it. To achieve the best results, it is cooked very slowly and long, also known as slow-cooking. Think of a cooking time of between 12 and 16 hours. When your pulled pork is ready, the meat can be pulled right off, hence the name pulled pork.
