Whole shoulder
This shoulder or Boston butt is used for the well-known Pulled Pork. This is a hugely popular meat dish. The meat comes from the neck and shoulder of the pig, the neck is completely boned, the shoulder still has the shoulder blade in it. To achieve the best results, it is cooked very slowly and long, also known as slow-cooking. Think of a cooking time of between 12 and 16 hours. When your Pulled Pork is ready, the meat can be pulled right off, as it were, hence the name Pulled Pork. Your long wait will be richly rewarded!
